Correction to Multi Grain recipe

Hi Everyone, especially Recipe Testers,

      In the multi-grain recipe sent out a few days ago I mistakenly referred to the mash in the introduction as 500 grams of water and 100 grams fo grain--but then, further down,  the actual recipe had only 400 grams of water and 80 grams of grain. The 400/80 gram version is the correct one. I adjusted all the ingredient amounts to keep thefinal dough at 2 pounds, but forgot to change the numbers in the intro. My oooops. Sorry.

    Also, the question has been raised: do we grind the flax seeds or use them whole?  Either is acceptable. because the seeds are getting hydrated in the mash they will be digestible even if whole. Normally, yes, grinding them makes them much more nutritionally valuable and accessible. I happen to like the pop of whole seeds in the bread so I leave them whole, but it is always acceptable to grind them for full nutitional value. So feel free to go either way, whole or ground.
