I know that a lot of new testers have written and asked to help out and are waiting for a reply, as well as many of the veteran testers, but I'm not quite ready to send out the new recipe versions yet. Soon, though. I'm waiting for the revisions to come back from the editor, which could be any time now but probably not for a few weeks. As soon as I get them, I promise to send them out for testing. Also, new testers, I will try to send you packets with response forms and introductory material very soon. I've just been trying to catch up and I was way behind. Please hang in there with me a little longer.
In the mean time, here's a really great site to check out: www.breadtechnique.com It belongs to Mark Witt, a serious home baker who made an excellent video on how to make great bagels using the poolish method. The video sells for less than $10.00 and is quite nicely done, with careful attention to detail and a very thorough, patient approach by Mark. The site offers a short sample clip. Mark is planning to do more of these, all built around the poolish method, the next one being on cinnamon buns. Check it out and, if you love bagels but have been intimidated by making them, this video will get you over the hump.
