I sent out over 300 recipe files on Sunday and, so far, have heard from about 100 of you who reported not receiving it. I'm thinking that I may have sent too many at a time so some of them didn't get through. I have resent to all who wrote, so if you still didn't get it let me know.
Also, a few testers have already reported back with good results but some of them noticed an error in my directions regarding the steam pan. Step 8 in the directions say to remove the "baking pan" from the oven but it should have read to remove the "steam pan."
Since it will be a while, at least a week and maybe longer, before I will have another recipe for testing my suggestion is to play with the ones I just sent out, trying the following variations: bake a portion of the first dough a few times during the following days and observe the differences the longer you hold it. With the second recipe (the same day method) try the following variations: 1. bake it as written; 2. save some dough and refrigerate it overnight and shape and bake it over the next day or two (or longer); 3. shape the same day dough into loaves (recipe 2), cover the shaped loaves, and refrigerate them and bake them the next day (or 2 or 3 days later). All of these variations are possible and I'd love feedback as to which variations work the best.
