Hi Recipe Testers,
Okay, as promised, the biscuit recipe is ready for testing. If you want to do this one please write to me for it and I'll send it out. Remember, this is for official testers only. If you are not a tester, please wait till Janaury, when I plan to re-open the list for new testers.
I will be posting again in a few days with some new recipes so, if you are not into biscuits, it won't be too long before you'll have some new breads to try again. As long as you have tested the first recipe (French Bread/Lean Dough) you can jump in and out as your time permits and you don't have to test every recipe to stay on board. As stated last week, I hope to have enough recipes ready soon so that you can pick from among them. It's coming together, albeit slowly, but I do have a test batch of Struan (multi-grain bread) in process and hope to add a few others by mid-week.

PS A number of bagel testers have suggested dampening the ends of their "rope" strands before wrapping them around to form each bagel. If you are making them again, you might want to try this: use a wet paper towel and wipe down the last inch or two of each end of the strand (you could also use a pastry brush dipped in water). If you do try this, please let me know if you think it makes a difference. Thanks!
