For those testers who have already sent in responses for the first recipe, when you are ready to try a new one, bagels, write to me and I'll shoot you back the file. Meanwhile, I'm going to spend the next few weeks incorporating all your helpful responses from the French bread test and writing out a number of new recipes which should be ready for testing soon (including chocolate babke, which I'm very excited about). Keep checking here for updates, as I will soon post a list of available recipes and let you choose from among them.
Meanwhile, the responses have been fantastic! I wrote back to a few of you but please don't worry if you didn't hear back. It's 3 AM here in Charlotte (actually, 2 AM thanks to tonight's return to Standard Time, but my body and mind say 3 AM) and I've been reading over everyone's response forms since 7 PM. Patterns are emerging and I'll be addressing them in the revisions, including batch size (smaller) and mixing and shaping instructions, as well as bake times and steam pan clarifications--your voices have been heard!!!
