A quick note as we head into the Christmas break, a typo caught by one of our alert bakers at the Forum (see previous post for the link to the Forum if you aren't already registered--there have been some great postings there, sharing questions, answers, and even a fabulous template for breaking down a recipe into user friendly spread sheets.). Anyway, in the back of Artisan Breads Everyday is a listing of all the recipes as bakers percentage formulas. The struan formula on page 208 incorrectly lists honey as 24.5% but it should correctly be 4.5%. You might want to write that in your copy of the book. Meanwhile, I'll contact Ten Speed Press and see if we can fix it for the next printing.
Thank you to everyone who has contributed to the ongoing conversations at the Forum and to all of you who are reading this blog. We are growing a very wonderful community of bakers and it's an honor to be a part of it. Thank you for all your help, suggestions, questions, and support during this past year--hey, together we put out a book that is reaching a lot of people, which is an amazing achievement. I look forward to the coming year of continued conversation and wish you all a wonderful holiday season and a successful, fulfilling new year.
May your bread always rise!!
