A quick note as we head into the Christmas break, a typo caught by one of our alert bakers at the Forum (see previous post for the link to the Forum if you aren't already registered--there have been some great postings there, sharing questions, answers, and even a fabulous template for breaking down a recipe into user friendly spread sheets.). Anyway, in the back of Artisan Breads Everyday is a listing of all the recipes as bakers percentage formulas. The struan formula on page 208 incorrectly lists honey as 24.5% but it should correctly be 4.5%. You might want to write that in your copy of the book. Meanwhile, I'll contact Ten Speed Press and see if we can fix it for the next printing.
